  • ¾ cup granulated sugar
  • ½ cup Marsala wine (or dark rum, or strong brewed coffee for alcohol-free)
  • 16 oz (2 cups) mascarpone cheese, softened
  • 1 ½ cups strong brewed espresso or coffee, cooled
  • 2 tablespoons coffee liqueur (optional, for extra flavor)
  • 1 teaspoon vanilla extract
  • 2 (7 oz) packages ladyfingers (savoiardi)
  • Unsweetened cocoa powder, for dusting

Instructions

  • Prepare the Sabayon: In a heatproof bowl set over a saucepan of simmering water (make sure the bowl doesn't touch the water), whisk together egg yolks and granulated sugar. Continue whisking constantly until the mixture is pale, thick, and reaches about 160°F (71°C). This usually takes 5-7 minutes.

  • Add Marsala: Remove the bowl from heat and slowly whisk in the Marsala wine (or chosen alternative). Continue whisking until the mixture cools slightly and thickens further. Let it cool completely.

  • Whip Mascarpone: In a separate large bowl, gently whisk the softened mascarpone cheese until smooth. Do not overmix.

  • Combine Cream: Once the egg yolk mixture is completely cool, gently fold it into the mascarpone cheese until just combined and smooth. Be careful not to deflate the mixture. Stir in the vanilla extract.

  • Prepare Coffee Dip: In a shallow dish, combine the cooled espresso and coffee liqueur (if using).

  • Assemble First Layer: Quickly dip each ladyfinger into the coffee mixture (do not let them soak, just a quick dip on both sides). Arrange a single layer of dipped ladyfingers in the bottom of a 9x13 inch (or similar) baking dish.
