Full Recipe Ingredients

For the Meatloaf:
- 2 lbs lean ground beef (90/10)
 - 1 cup Panko breadcrumbs
 - 1 small yellow onion, finely chopped
 - 2/3 cup whole milk
 - 2 large eggs, lightly beaten
 - 2 tablespoons ketchup
 - 1 tablespoon Worcestershire sauce
 - 2 cloves garlic, minced
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1/2 teaspoon onion powder

For the Glaze:
- 3/4 cup ketchup
 - 1/4 cup packed brown sugar
 - 1 tablespoon apple cider vinegar
 - 1 teaspoon Worcestershire sauce

Instructions
- Prepare the crockpot by creating a "rack" to lift the meatloaf out of the grease. Roll up two long pieces of aluminum foil and place them in an "X" shape on the bottom of a 6-quart or larger oval slow cooker, letting the ends come up the sides to act as handles.

- In a large bowl, gently combine the ground beef, Panko breadcrumbs, chopped onion, milk, eggs, 2 tablespoons of ketchup, Worcestershire sauce, minced garlic, salt, pepper, and onion powder. Be careful not to overmix, as this can make the meatloaf tough.

- Shape the meat mixture into a free-form oval loaf that will fit comfortably in your slow cooker. Carefully place the loaf on top of the foil rack inside the crockpot.

- In a small bowl, whisk together all the glaze ingredients: 3/4 cup ketchup, brown sugar, apple cider vinegar, and 1 teaspoon of Worcestershire sauce until smooth.

- Spread about half of the glaze evenly over the top of the meatloaf. Cover the slow cooker and cook on LOW for 4-6 hours, or until the internal temperature reaches 160∘F (71∘C).

- During the last 15-20 minutes of cooking, spread the remaining glaze over the meatloaf.

- Once cooked, carefully lift the meatloaf out of the slow cooker using the foil handles. Let it rest on a cutting board for 10 minutes before slicing and serving. This helps it hold its shape and stay juicy.

Enjoy every delicious, comforting bite of your homemade crockpot meatloaf!
